Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 oz) morello cherries, drained and juice reserved
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • Shaved chocolate for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Mix on medium speed for about 2 minutes.
  4. Gradually stir in the boiling water until well combined.
  5. Pour the batter evenly into prepared cake pans.
  6. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. Slice each cake in half horizontally, creating four layers.
  9. Moisten the first layer with reserved cherry juice, then add whipped cream and morello cherries.
  10. Repeat layering with the remaining cake, cherry juice, whipped cream, and cherries.
  11. Frost the top and sides of the cake with the remaining whipped cream and garnish with chocolate shavings.
  12. Chill the cake for at least one hour before serving.
