Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the vegetable oil, egg, vanilla extract, and milk.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  5. Gently fold in the fresh blueberries until evenly distributed.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days. For longer storage, freeze for up to 2 months.
