A delightful dish of tender chicken topped with creamy mozzarella, fresh tomatoes, and aromatic basil, drizzled with balsamic vinegar.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh mozzarella cheese, sliced
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-7 minutes on each side until browned.
  3. Transfer the chicken to a baking dish. Top each breast with slices of mozzarella, halved cherry tomatoes, and fresh basil.
  4. Drizzle the balsamic vinegar over the chicken and bake for 20-25 minutes or until cooked through.
  5. Serve warm, garnished with additional basil if desired.

Notes
