  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup diced onion
  • 1 cup chopped cilantro
  • Lime wedges for serving
  • Salsa for serving

Instructions

  1. Combine the chicken thighs, olive oil, chili powder, cumin, salt, and pepper in a large bowl. Mix until the chicken is well coated.
  2. Heat a grill or skillet over medium-high heat. Cook the chicken for about 5-7 minutes on each side, or until cooked through.
  3. Remove the chicken from heat and let it rest for a few minutes before slicing.
