  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/4 cup sugar (for topping)
  • 1/2 cup whipped cream (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish generously.
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl until it resembles wet sand, then press into the baking dish.
  3. Beat the softened cream cheese until smooth, then gradually add 1 cup of sugar, eggs, and vanilla, mixing until creamy. Pour over the crust.
  4. Bake for 30-35 minutes until the filling is set with a little jiggle in the center.
  5. Mix the remaining 1/4 cup sugar and 2 teaspoons of cinnamon, and sprinkle over the cheesecake bars while still warm.
  6. Cool the bars at room temperature, then cut into squares and serve with whipped cream.
