  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 pre-baked pie crust

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the sugar, cornstarch, and salt in a medium saucepan.
  3. Whisk in the milk over medium heat until thickened.
  4. Beat the eggs until light and frothy, tempering them with hot custard.
  5. Add vanilla extract and shredded coconut, mixing nicely.
  6. Fill the pre-baked pie crust with the creamy mixture.
