  • 2 cups cooked and shredded chicken
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup kalamata olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Combine quinoa and chicken: In a large bowl, combine the cooked quinoa and shredded chicken.
  2. Add fresh vegetables: Add in the diced cucumber, cherry tomatoes, red onion, feta cheese, and kalamata olives.
