A delightful dish combining juicy chicken with the sweet tropical flavor of pineapple, perfect for summer barbecues or quick weeknight dinners.

Ingredients

  • 4 chicken breasts
  • 1 cup pineapple chunks
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a bowl, combine soy sauce, brown sugar, olive oil, garlic powder, ginger powder, salt, and pepper.
  2. Add chicken breasts and pineapple chunks, marinating for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken and pineapple from marinade, discarding the marinade.
  5. Grill chicken for 6-8 minutes on each side until cooked through.
  6. Grill pineapple for 2-3 minutes on each side until caramelized.
  7. Serve grilled chicken topped with pineapple chunks and garnished with green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on a skillet until heated through.
