A healthier take on traditional carbonara, featuring whole wheat pasta, turkey bacon, and a creamy egg and cheese sauce.

  • 8 ounces whole wheat pasta
  • 2 tablespoons olive oil
  • 6 slices turkey bacon or pancetta
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • Fresh black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the whole wheat pasta according to package instructions, salting the water generously. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add turkey bacon or pancetta and cook until crispy.
  3. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Whisk together the eggs and grated Parmesan cheese in a bowl.
  5. Combine the cooked pasta with the skillet contents, mixing well to coat the pasta in the bacon fat.
  6. Remove from heat and quickly stir in the egg and cheese mixture until creamy.
  7. Season with fresh black pepper and garnish with parsley before serving.

Notes

For a vegetarian option, substitute turkey bacon with mushrooms. Reserve some pasta water for a creamier sauce.
