A light and refreshing take on potato salad, made with Greek yogurt and fresh herbs.

Ingredients

  • 2 pounds potatoes
  • 1/2 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped green onions
  • 1/4 cup diced celery
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Boil the potatoes in a large pot filled with water until tender, about 15-20 minutes. Drain and let cool before dicing.
  2. Prepare the dressing by mixing Greek yogurt, Dijon mustard, and apple cider vinegar in a bowl until smooth.
  3. Combine the diced potatoes, chopped green onions, and diced celery with the dressing. Season with salt and pepper to taste.
  4. Garnish with fresh parsley and give it a gentle stir before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days.
