Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup Greek yogurt
  • 1/2 cup sour cream or cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the garlic: In a pan, heat the olive oil over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  2. Wilt the spinach: Add the chopped spinach to the pan and cook until wilted.
  3. Prepare the creamy base: In a bowl, combine the Greek yogurt, sour cream or cream cheese, and grated Parmesan cheese.
  4. Combine spinach and garlic with the creamy mixture: Stir in the cooked spinach and garlic from the pan into the bowl.
  5. Season to perfection: Season the mixture with salt and pepper to taste.
  6. Serve and enjoy: Serve this dip warm or cold with pita chips, fresh vegetables, or your favorite dippables.

Notes

For extra flavor, add red pepper flakes or lemon juice. Frozen spinach can be used if drained well.
