A quick and nutritious meal featuring fresh vegetables wrapped in a delicious tortilla with creamy hummus.

Ingredients

  • 1 large tortilla
  • 1/2 cup hummus
  • 1/2 cucumber, sliced
  • 1 bell pepper, sliced
  • 1 carrot, grated
  • 1/2 avocado, sliced
  • Handful of spinach or lettuce
  • Salt and pepper to taste

Instructions

  1. Spread the hummus evenly over the tortilla.
  2. Layer the sliced cucumber, bell pepper, grated carrot, avocado, and a handful of spinach on top of the hummus.
  3. Season to taste with salt and pepper.
  4. Roll the tortilla tightly into a wrap.
  5. Slice the wrap in half to serve immediately.

Notes

These wraps can be stored in the fridge for up to 2 days. Avoid adding too much wet ingredients to keep them crisp.
