  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 3/4 cup freshly squeezed key lime juice
  • 1 teaspoon lime zest
  • 1/2 cup heavy whipping cream (for topping)
  • 2 tablespoons powdered sugar (for topping)
  • Lime slices (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Create the crust by mixing graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of a 9-inch pie pan.
  3. Bake the crust for 8-10 minutes until golden brown. Let cool.
  4. Mix egg yolks, sweetened condensed milk, key lime juice, and lime zest in a large bowl until smooth.
  5. Pour the filling into the cooled crust and spread it evenly.
  6. Bake for an additional 15 minutes. Cool to room temperature and refrigerate for at least 3 hours.
  7. Whip the heavy cream with powdered sugar until soft peaks form.
  8. Spread whipped cream over the chilled pie and garnish with lime slices. Slice and serve.

Notes

For a less tart flavor, reduce the lime juice slightly.
