Delightfully tangy lemon bars with a buttery crust, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Mix the flour and powdered sugar. Cut in the softened butter until crumbly.
  3. Press the mixture into the bottom of the baking dish and bake for 15 minutes.
  4. Whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  5. Pour the lemon mixture over the crust and bake for 20-25 minutes until set.
  6. Cool completely, then dust with powdered sugar before cutting into squares.

Notes

For best taste, use fresh lemon juice and zest. Let bars cool completely before cutting.
