  • 1 pre-made tart shell
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1/2 cup unsalted butter, cut into pieces
  • Whipped cream (for serving, optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Place the tart shell in the oven and bake until lightly golden. Allow to cool.
  2. Whisk together sugar, eggs, lemon juice, and lemon zest in a saucepan over medium heat.
  3. Cook continuously until the mixture thickens and coats the back of a spoon.
  4. Remove from heat and whisk in the butter until melted and smooth.
  5. Pour the lemon curd into the cooled tart shell and spread evenly.
  6. Chill in the refrigerator for at least 120 minutes before serving.
  7. Serve with whipped cream if desired.

Notes

Make sure to use fresh lemons for the best flavor. Don’t skip the chilling step, as it allows the curd to set properly.
