  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • Juice of 1 lemon
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the orzo: Bring the vegetable broth to a rolling boil and add the orzo pasta. Cook according to package instructions until al dente. Drain and set aside to cool slightly.
  2. Combine the vegetables: In a large bowl, toss together the cooked orzo, halved cherry tomatoes, diced cucumber, finely chopped red onion, and fresh parsley.
  3. Whisk the dressing: In a small bowl, whisk together fresh lemon juice, olive oil, and salt and pepper.
  4. Dress the salad: Pour the dressing over the salad ingredients and toss gently.
  5. Garnish with feta: Before serving, sprinkle crumbled feta over the top of the salad.

Notes
