A light and satisfying salad featuring marinated flank steak and fresh greens, perfect for busy weeknights or casual gatherings.

Ingredients

Scale
  • 1 flank steak
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Mixed salad greens
  • Cherry tomatoes, halved
  • Cucumber, sliced
  • Red onion, thinly sliced
  • Feta cheese, crumbled

Instructions

  1. Whisk together olive oil, balsamic vinegar, garlic, oregano, salt, and pepper in a bowl.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the flank steak for about 6-8 minutes on each side or until desired doneness.
  5. Remove from the grill and let it rest for a few minutes before slicing thinly against the grain.
  6. Combine salad greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  7. Top the salad with the grilled flank steak and sprinkle with feta cheese.
  8. Serve immediately.

Notes

Allow the steak to marinate longer for deeper flavor; use a meat thermometer to check cooking doneness.
