A delightful Mixed Berry Pie that captures the essence of summer with a perfect blend of sweetness and tartness.

Ingredients

  • 2 cups mixed berries (such as strawberries, blueberries, raspberries, blackberries)
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pre-made pie crust
  • 1 tablespoon butter (optional)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix the mixed berries, sugar, cornstarch, lemon juice, and vanilla extract in a bowl.
  3. Roll out the pre-made pie crust on a floured surface and place it into a pie dish.
  4. Pour the berry mixture into the pie crust.
  5. Dot the filling with small pieces of butter, if desired.
  6. Roll out a second pie crust or cut strips for a lattice top.
  7. Brush the top crust with a mixture of beaten egg and milk.
  8. Bake for 15 minutes at 425°F, then lower to 350°F (175°C) and bake for an additional 30-35 minutes.
  9. Cool the pie before serving.

Notes

To prevent a soggy bottom crust, consider blind baking the crust for 5-7 minutes before adding the filling.
