  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups rolled oats
  • 1 cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time and then stir in the vanilla extract.
  4. Combine all-purpose flour, baking soda, salt, and cinnamon in another bowl.
  5. Add the dry mixture to the creamed butter mixture, stirring until just combined.
  6. Gently fold in the rolled oats and raisins.
  7. Using a rounded tablespoon, drop the cookie dough onto ungreased cookie sheets, spacing apart.
  8. Bake for 10-12 minutes or until golden brown.
  9. Let cool on baking sheets for a few minutes before transferring to wire racks.
