  • 4 egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. Whip the egg whites until soft peaks form. Gradually add sugar, one tablespoon at a time, and continue whipping until stiff peaks form.
  3. Mix in the vanilla extract and vinegar gently.
  4. Spoon the meringue mixture onto the baking sheet, forming a circle with an indentation in the center.
  5. Bake for about 1 hour until crisp outside and soft inside. Let cool completely in the oven.
  6. Whip the cream with powdered sugar until soft peaks form.
  7. Assemble the Pavlova by placing the meringue on a serving plate, filling the center with whipped cream and topping with berries.

Notes

For optimal texture, consume within 24 hours. Avoid refrigerating the meringue as it can become sticky.
