  • 2 cups sliced peaches
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and diced
  • 1/4 cup ice water
  • 1 tsp vanilla extract
  • 1 egg (for egg wash)
  • Additional sugar for sprinkling

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix the flour, granulated sugar, and salt in a bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the ice water and vanilla extract until a dough forms. Wrap it in plastic wrap and refrigerate for about 30 minutes.
  5. Roll out the dough on a floured surface into a rough circle.
  6. Place the sliced peaches in the center of the dough, leaving a good border around the edges.
  7. Fold the edges of the dough over the fruit, brushing with beaten egg and sprinkling with additional sugar.
  8. Bake for 25-30 minutes or until the crust is golden brown and the peaches are bubbly.
  9. Let the galette cool slightly before slicing and serving.

Notes

Serve warm or at room temperature with vanilla ice cream or whipped cream. Store leftovers in an airtight container at room temperature for up to 2 days.
