Delightful skewers of marinated shrimp and fresh vegetables, grilled to perfection and coated with rich pesto.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 cup pesto sauce
  • 1 bell pepper, cut into pieces
  • 1 zucchini, sliced
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Combine the shrimp with the pesto sauce, seasoning with salt and pepper.
  3. Thread the shrimp, bell pepper pieces, and zucchini slices onto the skewers.
  4. Grill for 2-3 minutes on each side until the shrimp are pink and cooked through.
  5. Remove from the grill and serve immediately.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Choose large shrimp for best results.
