A delightful rhubarb pie that combines tartness and sweetness, perfect for spring gatherings.

Ingredients

  • 1 1/2 cups rhubarb, chopped
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon butter
  • 1 pie crust (store-bought or homemade)
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix the chopped rhubarb, sugar, flour, salt, and cinnamon in a large bowl.
  3. Pour the rhubarb mixture into the pie crust.
  4. Dot the filling with bits of butter.
  5. Cover with the top crust and seal the edges.
  6. Bake for 15 minutes in the preheated oven.
  7. Reduce the oven temperature to 350°F (175°C) and bake for an additional 40-45 minutes.

Notes

Serve warm with vanilla ice cream or freshly whipped cream. Can be frozen for up to 3 months.
