Ingredients

Scale
  • 2 racks of pork ribs
  • 1 cup of BBQ rub (store-bought or homemade)
  • 1 cup of BBQ sauce
  • Wood chips for smoking (e.g., hickory or mesquite)
  • Salt and pepper to taste

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Remove the membrane from the back of the ribs and season generously with the BBQ rub.
  3. Let the ribs sit at room temperature for about 30 minutes.
  4. Place wood chips in the smoker according to the manufacturer’s instructions.
  5. Smoke the ribs for 240-360 minutes, or until tender, spritzing with apple cider vinegar every hour.
  6. In the last 30 minutes of cooking, brush the ribs with BBQ sauce.
  7. Remove the ribs from the smoker, let them rest for 10 minutes, then slice and serve.

Notes

Remove the membrane from the ribs for better flavor absorption. Use a meat thermometer to check for doneness at about 190°F (88°C).
