A delightful combination of creamy, cheesy goodness wrapped in juicy chicken, inspired by the classic dip.

Ingredients

  • 4 chicken breasts
  • 1 cup spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix together the spinach, artichoke hearts, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper.
  3. Prepare each chicken breast by slicing horizontally to create a pocket.
  4. Stuff each chicken breast with the filling mixture.
  5. Sear each chicken breast in olive oil for 3-4 minutes on each side.
  6. Transfer the chicken to a baking dish and bake for 25-30 minutes.
  7. Serve hot with a side salad or roasted vegetables.

Notes

For a lighter version, substitute cream cheese with Greek yogurt or cottage cheese. Leftovers can be stored in the refrigerator for up to 3 days.
