A delightful summer dessert featuring fluffy biscuits layered with sweetened strawberries and whipped cream.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Macerate the strawberries in a bowl with sugar and let sit for about 30 minutes.
  2. Preheat the oven to 425°F (220°C).
  3. Combine flour, baking powder, and salt in a large bowl. Cut in cold, cubed butter until the mixture resembles coarse crumbs.
  4. Stir in heavy cream and vanilla extract until just combined.
  5. Turn the dough onto a floured surface and knead gently. Pat into a half-inch thickness and cut out rounds.
  6. Place the rounds on a baking sheet and bake for 12-15 minutes until golden.
  7. Cool slightly, then slice the biscuits in half.
  8. Layer strawberries and whipped cream between the biscuit halves and on top. Serve immediately.

Notes

Use very cold butter and cream for tender biscuits. Try not to overwork the biscuit dough for the best texture.
