A refreshing and healthy chia pudding made with mixed berries, perfect for a summer treat.

Ingredients

  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 2 tablespoons honey or maple syrup
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. In a bowl, whisk together the almond milk, chia seeds, honey or maple syrup, vanilla extract, and salt.
  2. Stir well to combine and let it sit for about 10 minutes.
  3. After 10 minutes, stir again to prevent clumping.
  4. Cover and refrigerate the mixture for at least 240 minutes or overnight.
  5. When ready to serve, layer the chia pudding with mixed berries in individual jars or bowls.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3 to 5 days. Stir before serving again.
