Delightful chocolate whoopie pies filled with fluffy marshmallow cream, perfect for any occasion.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the granulated sugar and softened butter until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, cocoa powder, baking soda, and salt in another bowl.
  5. Gradually add the dry mixture to the creamed mixture, alternating with the milk.
  6. Drop tablespoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the tops spring back when lightly touched.
  8. Let the cookies cool completely on a wire rack.
  9. Prepare the filling by beating together the marshmallow fluff, powdered sugar, vanilla extract, and softened butter until smooth.
  10. Spread a generous amount of filling on the flat side of one cookie and top with another cookie, flat side down.
