  • 2 medium zucchini, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 large egg
  • Vegetable oil for frying

Instructions

  1. Grate the zucchini and place it in a colander. Sprinkle salt over the zucchini and let it sit for about 10 minutes to extract moisture.
  2. Squeeze out the excess moisture from the zucchini using a clean kitchen towel.
  3. Combine the grated zucchini, flour, Parmesan cheese, green onions, garlic powder, black pepper, and egg in a mixing bowl. Mix until well combined.
  4. Heat vegetable oil in a skillet over medium heat until hot.
  5. Drop tablespoons of the zucchini mixture into the hot oil and flatten slightly with a spatula.
  6. Fry until golden brown, about 3-4 minutes on each side.
  7. Remove the fritters and place them on paper towels to drain excess oil.
  8. Serve warm and enjoy with sour cream or marinara sauce.

Notes

For extra crispy fritters, ensure you remove as much moisture as possible from the zucchini.
