A fun and flavorful way to enjoy shrimp, potatoes, and corn, all cooked in easy-to-clean foil packets.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound baby red potatoes, halved
  • 2 ears of corn, cut into thirds
  • 1 lemon, sliced
  • 1 tablespoon Old Bay seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine shrimp, potatoes, corn, lemon, Old Bay seasoning, olive oil, salt, and pepper.
  3. Divide the mixture among sheets of aluminum foil, creating packets.
  4. Fold and seal the packets tightly.
  5. Place the packets on a baking sheet and bake for 20-25 minutes or until the shrimp are pink and the potatoes are tender.
  6. Carefully open the packets, garnish with parsley, and serve hot.

Notes

For an extra kick, add some sliced sausage or spices of your choice. Shrimp can be substituted with crab or scallops.
